How Do I Calibrate a Wolf Oven's Temperature?

The short answer

You do not. Wolf's published position is that oven temperature calibration is a service adjustment rather than a control-panel setting, and on an M Series touchscreen the option marked Temp Offset is flagged for service only. For the contractor

Before any of this becomes an adjustment, rule out the two faults that imitate it. A door that no longer pulls up square bleeds heat along one edge and the control never learns of it — the cavity just takes longer and settles lower than it should. A sensor reading high does the opposite kind of damage: it tells the board the oven is hotter than it is, so the preheat chime lands early and everything after it bakes cold.

If the readings come back steady and wrong, an offset is the right answer and it belongs to somebody with the service menu open. If they come back unsteady, moving the offset only shifts the middle of a bad curve and buries whatever is causing the swing. Either way the measuring comes first, and it costs nothing but an afternoon of writing numbers down.

No, and it is the most common wrong turn. On an M Series the menu entry called Calibration adjusts the touchscreen display, not the oven. The temperature setting sits separately as Temp Offset and is marked for service only, which is Wolf's way of saying it is not an owner adjustment.

How do I measure the drift properly before I call anyone?

Digital probe on the middle rack, oven empty, door shut. Take a reading every five minutes through a full preheat and for twenty minutes after the chime. Steady and wrong is one fault; swinging wide either side of the setpoint is a different one, and calibration would only hide it.
