Because the latch releases on temperature rather than on the clock. On a double oven there is a lockout nobody expects: while one cavity runs Clean, the other cannot be used. Four hours is a long time to find that out on the afternoon of a dinner.
Before it starts, the broiler pan, the oven racks, their guides and any loose utensils come out — Wolf prints that as a caution rather than a suggestion. It stops being normal when the cavity is cold to the hand, the display has cleared and the latch still has not let go. The lock motor or its switch is then the suspect, and the door should not be forced.
Two questions that usually follow
Is there a way to cancel Clean once it has started?
The control has an Off that clears the cycle — a touch on the touchscreen, or the knob turned to Off on the professional model. It does not release the door. The latch is holding on cavity temperature, so the heat has to come out of the box either way, and stopping early gains nothing.
Will the oven lights come back on when it unlocks?
The lights are disabled for the whole of Clean, which is one of the ways people decide something has gone wrong. They return with normal operation once the cycle has ended and the door has released. Exterior surfaces also run hotter than usual during the cycle, so keep children away from the front.
