Tank or plumbed, which is the first question

Two arrangements exist. One draws from a removable tank behind an access door on the front; the other is piped to the house supply, with a braided feed, a corrugated drain, a high loop in that drain, and pressure between 15 and 145 psi. Planning them is not the same job. A plumbed unit wants the back of its base support left open for the lines; a tank unit wants nothing but the circuit. What goes in the water side

A full tank carries about an hour and a half of continuous steam, which is four or five sessions for most people. Water is pumped back into the tank once it has dropped below 175F, so the display asking you to leave the tank alone for a few minutes after cooking is the machine doing its job.

Descaling is the maintenance that decides its life

Scale is a by-product of boiling water, not a sign of neglect, and the oven counts its own hours against the hardness figure entered at installation. Somewhere between six and eighteen months it will say so. The routine takes about three-quarters of an hour plus rinsing, uses the one branded solution Wolf names, and cannot be interrupted once started. Skipping it is the single most expensive habit on this appliance.

No steam, or no heat

They are different faults. A unit that heats but never steams points at the water path — tank, pump, boiler, scale. A unit that steams but will not hold temperature points at the heating side and its sensing. Switching and pumping noises, and water dripping into the lower trim just after the door opens, are both normal.

On a plumbed unit, the back of the base support left open so the water and drain lines can run through it and be reached again later.

Wolf puts it at every six to eighteen months depending on water conditions, and the oven asks for itself: the display reads that the boiler has scaled up. The interval is driven by the hardness setting you enter at installation. Leave it long enough and the appliance blocks until the job is done.

Can I use filtered or bottled water in it?

Not filtered, not distilled, not demineralised. The unit needs the minerals in fresh cold tap water to work at all.
